Turkish Stuffed Flatbreads 🫓🔥 Dough 3 cups flour 2 tsp instant yeast 1 tsp sugar 1 tsp salt 1 tbsp olive oil 1 cup warm milk 2 tbsp yoghurt Mix, knead 8–10 mins, rise 1 hr. Filling 500g beef mince 1 small onion 2 garlic cloves 1 tbsp tomato paste 1 tsp cumin 1 tsp smoked paprika ½ tsp chilli flakes Salt + pepper Cook onion + garlic then add mince, add paste + spices and cook until browned. Cool completely. Assemble Divide dough into 6. Flatten, add 2–3 tbsp filling, seal like a dumpling. Flip, gently roll thick. Rest 15 mins. Cook them in a Dry pan, medium heat, 3–4 mins per side. These thick and fluffy Turkish-style stuffed flatbreads are filled with seasoned beef mince and cooked until golden brown. A simple, satisfying dinner that turns leftover mince into soft, pillowy bread pockets packed with flavour.

Ingredients
  

Mince Filling

  • 500 grams venison OR beef mince
  • 1 small onion finely diced
  • 2 cloves garlic OR 2 tsp minced garlic
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp chilli flakes optional
  • 2-3 tbsp water OR beef stock
  • Salt & Pepper to Taste
  • ½ cup grated cheese optional

Fluffy Dough

  • 3 cups plain flour 375g
  • 2 tsp instant yeast 7g
  • 1 tsp white sugar
  • 1 cup warm milk not hot, 250ml
  • 2 tbsp plain yoghurt
  • 1 tbsp olive oil

Optional for Serving

  • 1 tbsp butter melted
  • fresh parsley
  • garlic yoghurt
  • lemon

Instructions
 

Make the Beef Filling

  • Heat olive oil in a large frying pan over medium heat.
  • Add the finely diced onion and cook for 4–5 minutes until soft and lightly golden.
  • Add the garlic and cook for 30 seconds until fragrant.
  • Add the beef mince and break it up. Cook until browned and no longer pink.
  • Stir in cumin, smoked paprika, chilli flakes (if using), salt and pepper.
  • Add 2–3 tablespoons water or stock and cook for another 2–3 minutes. The mixture should be moist but not wet.
  • Remove from heat and allow to cool completely. Filling must be fully cooled before stuffing the dough.

Make the Dough

  • In a large bowl, combine flour, yeast, sugar and salt
  • Add warm milk, yoghurt and olive oil.
  • Mix until a rough dough forms.
  • Knead for 8–10 minutes until smooth and soft. The dough should feel slightly tacky but not sticky.
  • Place in a lightly oiled bowl, cover, and allow to rise for 1 hour or until doubled in size.

Assemble the Flatbreads

  • Punch down the dough and divide into 6 equal portions.
  • Roll each portion into a ball.
  • Flatten each ball into a small disc.
  • Place 2–3 tablespoons of cooled beef filling in the centre. (If adding grated cheese add that on top)
  • Bring the edges up and pinch tightly to seal.
  • Flip seam-side down and gently press or roll into a thick round about 15cm wide.
  • Let the shaped breads rest for 15–20 minutes.

Cook

  • Heat a dry frying pan over medium heat.
  • Cook each flatbread for 3–4 minutes per side until golden brown with light char spots.
  • Adjust heat as needed so they cook through without burning.
  • Optional: Brush with melted butter while warm for extra softness.

Notes

  • Cool the filling completely before stuffing the dough. Warm filling can cause the dough to tear and leak while cooking.
  • The beef mixture should be moist but not wet. If it looks dry, add a tablespoon of water or yoghurt. If too wet, cook it down slightly.
  • Don’t roll the breads too thin, keeping them slightly thick helps them stay fluffy.
  • Cook over medium heat so the inside heats through before the outside browns too quickly.
  • These are best eaten warm, straight from the pan.
