Greek Yoghurt: Adds moisture, and tenderness.

Optional Fillings (Savoury): Cheese, ham, herbs (keep fillings minimal to avoid soggy scrolls).

Optional Fillings (Sweet): Cinnamon sugar, chocolate, jam (spread thin for even baking).

For these 2-ingredient scrolls, the type of yoghurt you use makes a difference. Thick Greek yoghurt works best because it gives a soft, tender dough that’s easy to roll. Natural or plain yoghurt can also work, but you might need to sprinkle in a little extra flour if it’s runnier. Low-fat yoghurt produces a slightly lighter dough, while flavoured yoghurts can add a hint of sweetness or tang.

How to Make 2 Ingredient Dough Scrolls

Mix the Dough

Combine your self-raising flour and Greek yoghurt in a bowl. If you prefer, you can use a stand mixer or food processor instead of your hands to bring it together until a soft, slightly sticky dough forms. You can knead in the bowl or on a slightly floured work surface. Don’t worry if it’s a little wet, this dough is very forgiving. If it’s too sticky to handle, sprinkle in a little extra flour, if it’s too dry, add a splash of yoghurt. No need to start over, it’s easily fixable!

Lightly flour your work surface and rolling pin. Roll the dough into a rectangle approximately 35cm x 25cm to make 12-14 medium Scrolls. The dough should be about 1 cm thick. Rolling it evenly will ensure your scrolls bake uniformly.

Add Fillings

Spread your chosen filling evenly across the dough, leaving a small border around the edges:

  • Savoury examples: cheese, cooked bacon, ham, herbs, or pesto
  • Sweet examples: cinnamon sugar, chocolate chips, jam, or fruit puree

But be careful not to overload with wet fillings, as this can make scrolls soggy.

Roll & Slice

Starting from the long edge, roll the dough tightly into a log. Use a sharp knife to slice into even scrolls, 8–14 depending on your preferred size.

Bake

Place the scrolls on a lined baking tray:

  • Just touching: For soft, pull-apart sides
  • Far apart (2–3 cm / 1 in): For crisp edges all around may need 1–2 extra minutes baking

Bake in a preheated oven at 180 °C fan (200 °C conventional) for 20 minutes, until golden brown on top. Rotate the tray halfway if your oven has hot spots.

Cool & Serve

Allow scrolls to cool for 5 minutes on the tray, then transfer to a wire rack. Enjoy warm, or store in an airtight container for 2–3 days. You can also freeze unbaked scrolls for up to a month just bake straight from frozen, adding 2–3 minutes to baking time.

Ingredients
  

  • 3 cups self-raising flour (375g)
  • 1 ½ cups thick plain yoghurt (like greek or greek style) (375g)

Instructions
 

Make the dough

  • In a large bowl, mix flour and yoghurt until it clumps together.
  • Either in the bowl or on a lightly floured bench knead for 1–2 minutes until it forms a nice soft ball (don’t overwork it).
  • If it’s sticky, dust with more flour, if too dry, add a tablespoon of yoghurt.

Roll it Out

  • Roll into a rectangle about 35cm x 25cm (roughly 8mm thick). Try to keep edges as neat as possible so your scrolls roll evenly.

Fill & Roll

  • Spread with the toppings of your choice and roll up tightly from the long edge into a log.
  • Slice into 12-14 medium rounds with a sharp knife.

Bake

  • Arrange the scrolls on a lined baking tray cut side up so you can see the spiral and just touching not squished together.
  • Bake at 200°C (fan 180°C) for 18-20 minutes until puffed and golden.
  • Best eaten warm. If storing, cool them ompletely and keep in an airtight container. Reheat in microwave for 20 seconds, or use the oven/airfryer.

Notes

Dough Texture
  • Your dough will be soft and slightly sticky, this is normal.
  • If it feels too wet to handle, sprinkle in 1–2 tablespoons of extra self-raising flour until it’s manageable and if too dry 1-2 tablespoons of yoghurt.
Spacing Options
  • Just touching: So the edges lightly touch. This gives soft sides that rise together, creating a fluffy, pull-apart texture.
  • Far apart: Leave about 2–3 cm between each scroll. This allows each one to bake evenly with golden, crisp edges all around.
