These Easy Chocolate Chip Cookies are always on repeat in my house! Warm, gooey, and packed with chocolate. These are the ultimate comfort treat, soft, chewy, and ridiculously simple to make. No fancy ingredients, no mixers, just a few pantry staples and 20 minutes from dough to “yum!” Perfect for a quick bake, a sweet snack, or impressing anyone who walks through your door.

Ingredients

These cookies are ridiculously simple, just melted butter, sugars, an egg, vanilla, chocolate, and the usual flour, bicarb, and pinch of salt. That’s it! Nothing fancy, just soft, chewy, chocolatey goodness every time.

Butter – Melted butter is what makes these cookies soft and chewy instead of cakey. You can use salted or unsalted butter, whatever you have on hand. Melted butter also means no mixer needed!

White sugar – Adds sweetness and gives the cookies those slightly crisp, golden edges. It balances out the brown sugar so they’re not overly soft.

Brown sugar – The secret to that chewy, rich texture and a hint of caramel flavour. It also helps the cookies stay soft for days.

Egg – Binds everything together and adds structure. One egg is all you need for the perfect balance of chew and softness.

Vanilla essence – A little splash goes a long way! It enhances the flavour and gives that nostalgic, bakery-style cookie vibe.

Chocolate chips (or drops/chunks) – The star of the show. Use milk, dark, or a mix, and don’t be shy with them. The more chocolate, the better!

Flour – Plain flour gives the cookies their body. Use 1½ cups for soft, chewy cookies, or 1¾ cups if you like them thicker and less chewy.

Baking powder – Helps the cookies rise just slightly, so they’re not completely flat.

Baking soda – Works with the brown sugar and butter to give that classic spread and tender, chewy middle.

Salt – Balances the sweetness and makes the chocolate flavour pop. Even if you’re using salted butter, don’t skip it!

How to Make The Easiest Chocolate Chip Cookies

These cookies are as simple as they come no mixer, no chilling time and no stress. Just melt, mix, bake, and enjoy that buttery, chocolatey goodness.

Mix the sugars and butter

In a large bowl, combine the melted butter with both sugars. Mix until smooth and glossy, this helps dissolve the sugar a bit and gives your cookies that perfect chewy centre.

Add the egg and vanilla

Once the butter-sugar mix looks even, add the egg and vanilla essence. Whisk or stir well until everything comes together in a thick, creamy batter.

Add the chocolate

Stir through your chocolate chips (or drops/chunks). Adding them now helps coat them in the buttery mix, which means they spread more evenly through the dough later.

Add the dry ingredients

Sprinkle in the flour, baking powder, baking soda, and salt. Mix until just combined — don’t overmix or your cookies can turn tough. The dough should be soft and slightly sticky but easy to scoop.

Scoop and shape

Roll about a tablespoon of dough into balls (or use a cookie scoop), then place them on a lined baking tray with a bit of space between each one. Flatten them slightly with your fingers — they’ll spread as they bake.

Bake!

Pop the tray into a preheated 180°C oven for about 10 minutes, or until the edges are golden and the centres look just set. They’ll firm up as they cool.

Cool (if you can wait)

Let the cookies cool on the tray for 5 minutes, then transfer to a wire rack. This helps them set while staying soft and chewy inside. Best enjoyed warm, straight off the rack, with melty chocolate and a cup of coffee (or a glass of milk for the classic moment).

Storage of Chocolate Chip Cookies

Store your choc chip cookies in an airtight container at room temperature for up to 4 days — though they usually disappear long before that! If you like them warm and gooey again, just pop one in the microwave for about 10 seconds. The dough also freezes beautifully — roll into balls, freeze on a tray, then store in a ziplock bag for up to 3 months. Bake straight from frozen, adding an extra minute or two to the bake time.

Ingredients
  

  • 120 grams butter (salted or unsalted) melted
  • ½  cup white granulated sugar 110 grams
  • ½  cup brown sugar (packed) 110 grams
  • ½  tsp vanilla essence
  • 1 cup chocolate drops (milk, semi sweet, dark) 150-170 grams
  • 1 ½  cups plain all purpose flour or 1¾ cups for thicker, less chewy cookies (190 – 220 grams)
  • ½  tsp baking soda
  • ½  tsp baking powder
  • tsp salt pinch

Instructions
 

  • Preheat the oven to 180°C (fan-bake) and line a baking tray with baking paper.
  • Whisk together the melted butter, white sugar, brown sugar, egg, and vanilla until smooth and glossy.
  • Stir in the chocolate chips.
  • Add the dry ingredients – flour, baking powder, baking soda, and salt, and mix until just combined. Don’t overmix!
  • Roll the dough into tablespoon-sized balls and place them on your tray, leaving space between each cookie. Flatten slightly with your fingers or the back of a fork.
  • Bake for 10 minutes, or until the edges are golden and the centres are still soft.
  • Cool on the tray for 5 minutes before transferring to a wire rack.
  • Then… yum yum yum, get them in your tum!

Notes

Flour: Use 1½ cups for a chewy cookie or 1¾ cups for thicker, more cakey cookies.
Butter: Make sure it’s melted but not hot. Warm butter can cook the egg or make the dough greasy.
Chocolate: Use any mix you love … chips, chunks, drops, or chopped chocolate bars.
Storage: Store in an airtight container for up to 4 days, or freeze the dough balls for easy cookies anytime.
