Banana & Coconut Chocolate Chip Muffins

Banana Coconut Muffins = Banana muffins, but make them café.
Soft, fluffy banana, coconut batter studded with chocolate chips, topped with a glossy layer of chewy caramelised coconut. They smell like heaven and taste like banana bread, lamington, and cookie all in one.

These muffins are all about texture and flavour layers. The base is soft, buttery banana with flecks of coconut baked through, along with melty pockets of chocolate. Then that glossy caramelised coconut on top adds a chewy, toffee that tastes like the edge of an Anzac biscuit. Every bite swings between rich banana bread, chocolate chip cookie, and toasted coconut slice sweet, nutty, and just a little bit indulgent.

Ingredients

Everything you will need to make these delish tropical vibe muffins!

Extra-ripe bananas – The spottier and softer, the better. When bananas go dark and sweet, their starches turn to sugar, giving your muffins a deep, caramel-like banana flavour and extra moisture. They also mash smoother, which keeps the texture tender instead of gummy.

Melted butter – brings that rich, buttery depth and helps the muffins bake up golden with crisp edges.

Neutral oil  – balances the butter by keeping the inside soft and moist for days. The mix of butter + oil is the secret to that “bakery-style” texture that doesn’t dry out.

Brown sugar – adds sweetness, giving each bite a warm, caramel tone that ties in perfectly with banana and coconut. It also helps keep the muffins moist and gives the tops a lovely golden colour.

Eggs – hold everything together and give structure and lift. Two eggs make the muffins feel rich but still fluffy.

Thick Greek yoghurt or sour cream – adds moisture and a subtle tang to balance all the sweetness. It’s what gives the crumb softness instead of being dense like banana bread.

Plain flour – gives the muffins enough structure to rise tall but still stay soft. Using just the right amount keeps the texture light and fluffy, not heavy.

Desiccated coconut – adds chew and that lightly nutty, toasty flavour that makes these stand out. It gives the inside a bit of texture.

Chocolate chips – use dark or semi-sweet for a richer, less-sweet bite that balances the banana and caramel tones. Milk chocolate works too if you want a sweeter muffin.

Baking powder + baking soda – work together for lift. The soda reacts with the yoghurt for tenderness, while baking powder gives extra rise.

Caramelised coconut topping – A buttery, mix of brown sugar and coconut that you spoon over warm muffins. It cools into a chewy, glossy layer that tastes like the best part of a toasted Anzac biscuit.

How to Make Banana & Coconut Choc Chip Muffins

Prep and preheat
Heat your oven to 180°C (fan 160°C) and line a large muffin tin with 12 café-style paper cases.

Mash the bananas
In a large mixing bowl, mash 3 extra-ripe bananas until smooth with just a few small lumps. The more speckled they are, the deeper the flavour and sweetness.

Add the wet ingredients
Whisk in melted butter, oil, brown sugar, eggs, and yoghurt (or sour cream). The mixture should look glossy and slightly thick, this combo is what keeps your muffins rich but still light.

Combine the dry ingredients
In a separate bowl, whisk together flour, coconut, baking powder, baking soda, and a pinch of salt. Fold this into the wet mixture until just combined — don’t overmix or the muffins can turn tough.

Add the Chocolate
Fold through thechocolate chips. Reserve a small handful of choc chips to sprinkle on top before baking for that café-style look.

Fill the tins
Divide the mixture evenly between your muffin cups — fill them right to the top for those tall domed café-style muffins. Sprinkle the reserved choc chips on top.

Bake
Bake for 22–26 minutes, or until risen, golden, and a skewer inserted into the centre comes out clean. Let them cool in the tin for 10 minutes — this helps them set so they don’t collapse.

Make the caramelised coconut topping
While the muffins cool, add butter, brown sugar, and golden syrup to a small pan over medium heat. Stir until melted and golden — about 3–5 minutes — until it starts to bubble. Add the coconut thread and stir for a further 1-2 mins until fully coated, golden and sticky.

Spoon over and finish
While the muffins are still slightly warm, spoon the caramelised coconut over the tops. It’ll thicken as it sets but stay chewy and glossy.

Cool and serve
Let them cool completely before removing from the tray. The topping will firm up and catch the light — chewy, shiny, and irresistible.

Storage

These muffins keep beautifully thanks to the banana and yoghurt — they actually taste even better the next day. Store them in an airtight container at room temperature for up to 3 days, or in the fridge for up to 5 if it’s warm where you are. To bring back that just-baked softness, pop one in the microwave for 10–15 seconds before eating. They also freeze perfectly — wrap individually and freeze for up to 2 months, then thaw at room temp or warm in the oven. The caramelised coconut topping stays chewy and sweet, so they never feel like “day-old” muffins.

Ingredients
  

  • 3 bananas very ripe mashed, 300g
  • 110 grams butter melted
  • ¼ cup neutral oil (canola, vegetable, light olive etc.) 60ml
  • ¾ cup brown sugar packed, 150g
  • 2 tsp vanilla essence
  • cup thick greek yoghurt OR sour cream 80g
  • cups plain all purpose flour 220g
  • ½ cup desiccated coconut 40g
  • 1 tsp baking soda
  • tsp baking powder
  • ½ tsp salt
  • 1 cup chocolate chips dark, milk, or mix, 170g

Caramelised Coconut Topping (Optional)

  • 1 tbsp butter 15g
  • 2 tbsp brown sugar 25g
  • 1 tbsp golden syrup (or honey), 20g
  • ½ cup coconut thread 40g

Instructions
 

  • Preheat oven: Heat to 220°C (fan 200°C). Line a 12-hole muffin tray with paper liners.
  • Wet ingredients: In a large bowl, whisk melted butter, oil, brown sugar, mashed bananas, eggs, vanilla, and yoghurt until smooth.
  • Dry ingredients:In another bowl, whisk flour, shredded coconut, baking soda, baking powder, and salt.
  • Combine:Add dry to wet, fold gently until just combined. Stir in choc chips — batter should be thick and slightly lumpy.
  • Fill tins:Divide batter evenly between 12 muffin cases, filling almost to the top for tall café-style muffins.Sprinkle a few extra choc chips on top.
  • Bake:Bake for 5 minutes at 220°C, then (without opening the oven) lower to 180°C and bake another 13–16 minutes until domed and golden.Cool for about 10–15 minutes while you make the topping.

Caramelised Coconut Topping (Optional)

  • In a small pan, melt butter, brown sugar, golden syrup (or honey), and salt over medium heat until bubbling.
  • Add coconut and stir for 1–2 minutes until golden and sticky.
  • Spoon or press a little of the warm caramelised coconut on top of each warm muffin. It’ll stick and set as it cools into a glossy, chewy topping.

Notes

  • Use very ripe bananas. Dark spots = sweet, rich flavour.
  • For extra height, rest the filled muffin tray for 10 min before baking.
  • These freeze perfectly,  just reheat for 15 seconds.
