This no-bake mocha cheesecake is rich, creamy, and full of chocolate-coffee goodness, set on a buttery cocoa biscuit base. Light whipped cream folded into the filling keeps it airy and silky, making it indulgent without being heavy. With just a handful of simple ingredients, this no-bake mocha cheesecake couldn’t be easier… chocolate, coffee, cream, and biscuits do all the work!
Plain vanilla biscuits – Provide structure and crunch for the base; use classic super wines, tea biscuits or digestive-style cookies for a sturdy but tender foundation.
Butter – Binds the crushed biscuits together and adds richness; unsalted butter is best so you can control sweetness but salted butter works just as well.
Cocoa powder – Gives a chocolatey depth and slight bitterness to balance the sweetness; natural unsweetened cocoa works well.
Sugar – Adds sweetness and helps bind the base; caster sugar or fine granulated sugar mixes in evenly.
Cream cheese – The creamy, tangy base of the cheesecake; full-fat cream cheese gives the best flavor and texture.
Milk chocolate – Adds smooth chocolate flavor; use good-quality milk chocolate for meltability and taste.
Cream – Whipped into soft peaks, it lightens the filling and makes it airy; heavy whipping cream or double cream works best.
Espresso powder – Boosts coffee flavor without adding liquid; instant espresso powder is ideal.
Vanilla extract – Enhances all the flavors and adds warmth; pure vanilla extract is best.

How to make this No-Bake Mocha Cheesecake
Start with the base. Crush up your plain vanilla biscuits into fine crumbs. Use a food processor if you’ve got one, or bash them in a bag with a rolling pin (great stress relief). Melt the butter, then stir in the cocoa powder and sugar until it’s all smooth and chocolatey. Pour that over the biscuit crumbs and mix until everything’s evenly coated and it holds together when pressed. Tip it into your tin and press it down nice and firm (the back of a spoon or a glass works well). Pop it in the fridge to chill while you get on with the fun part.
For the filling, melt your milk chocolate gently (short bursts in the microwave or over simmering water) and let it cool a bit so it’s warm but not hot. In a bowl, beat the cream cheese until it’s completely smooth, then add in the espresso powder and vanilla. That’s your mocha flavour right there… rich, creamy, and just enough coffee to balance the sweetness. In a separate bowl, whip the cream until it’s soft and fluffy. Keep it light and airy, this is what makes the cheesecake so creamy and mousse-like. Spoon it over your chilled base and smooth the top with a spatula. Tap the tin gently on the bench to get rid of any air bubbles, then refrigerate for at least 6 hours (overnight if you can wait, it slices beautifully once it’s fully set).
When it’s ready, run a warm knife around the edge to loosen it, then slice it up with a hot, dry knife for clean edges. Dust the top with cocoa powder or sprinkle over a few chocolate curls if you’re feeling fancy. Keep your cheesecake covered in the fridge and it’ll stay perfect for up to 4 days. Honestly, it’s even better the next day once everything’s had time to settle and the flavours deepen. If you want to make it ahead, prepare a day before serving, but add any toppings right before you bring it out. It freezes surprisingly well, wrap slices tightly and freeze for up to a month, then thaw in the fridge before serving.

Ingredients
Base
- 250 grams plain biscuits (like supervenes or vanilla round etc.) crushed
- 100 grams butter melted
- 2 tbsp cocoa powder
- 1 tbsp white sugar (optional)
Filling
- 500 grams cream cheese
- 180 grams milk chocolate melted & slightly cooled
- ¾ cup heavy cream
- 2 tsp instant espresso powder
- 1 tsp vanilla essence
Instructions
Base
- Crush the biscuits finely (use a food processor or place in a ziplock and bash with a rolling pin)
- In a small saucepan or microwave, melt the butter.
- Mix the crushed biscuits with cocoa powder and sugar in a bowl.
- Pour in the melted butter and mix until the mixture holds together when pressed.
- Press the mixture firmly into the base of your springform or serving dish to form an even layer.
- Chill in the fridge while you make the filling.
Filling
- Melt the milk chocolate gently (microwave in short bursts or over a double boiler).
- In a mixing bowl, beat the cream cheese until smooth and creamy.
- Whip the cream into soft peaks in a separate bowl
- Add the cream, espresso powder, and vanilla extract, to the cream cheese and mix until fully combined.
- Gradually fold in the melted chocolate until smooth.
- Pour the filling over the chilled biscuit base and smooth the top with a spatula.
- Refrigerate for at least 6 hours (or overnight) until set.
- Decorate however you like with cocoa powder, coffee beans, grated chocolate are just some ideas.
Notes
- For a firmer base, chill the biscuit layer for 15–20 minutes before adding the filling.
- Use good-quality chocolate and cream cheese for the best flavor and texture.
- Adjust espresso powder to taste…start small if you prefer a subtle coffee flavor.
- Softly fold in whipped cream to keep the filling light and airy.
- Can be made a day ahead overnight chilling improves texture and flavor.
